VINEYARD
One of the highest vineyards in the world at an altitude of 2,100 meters above sea level. Semi-desert with warm days and cold nights, surrounded by mountains that provide more hours of cold, creating a good thermal differential that allows for slow ripening, enhancing aromatic concentration.
VINIFICATION
The harvest is done by hand, during the coldest hours of the night. We destem and ferment at controlled temperatures, with pump-overs, to achieve greater aroma and color concentration.
Tasting Notes
APPEARANCE: Medium-high intensity garnet red color, with slightly purplish hues, bright and clean. Earthy tones typical of its aging.
AROMA: In the mouth, it is a wine that has a great structure, but very balanced thanks to its long aging.
TASTE: Fruity and spicy, highlighting the typicality of Cabernet Sauvignon with notes of plum, blackberries, and pepper, combined with toasted hints from the barrel with aromas of caramel, vanilla, and cocoa.
PAIRING: Ideal to accompany marbled cuts of meat, grilled lamb, pasta, mature or aged cheeses, and dark chocolate.
